I want to try and create a very bright and joyful scene, yet with something odd about it. I don't believe uncanny implies darkness, and I am sure that seemingly happy scene might seem even more odd than not.
You're right - you might want to look at hyperrealism as an adjunct to the uncanny (for instance, waxworks are 'hyperreal'). Hyperrealism, as a concept, might draw you towards colour, but also keep you within the apposite thematic ball park.
